I’m trying to stay healthy, really I am. But with colder, shorter days and a very rambunctious toddler depleting my energy, the prospect of cooking at the end of the day doesn’t remotely appeal to me. As luck would have it, my sister started sending me one-pot recipes she’s been making using PastaRx. As tempted as I was with mom-fatigue to steal the photos she sent and claim them as mine, I opted instead to prepare them myself and share, because they do in fact make healthy eating easier.

 

Recipe #1: Orzo Enchilada

One of the biggest selling points for me to follow through with a recipe is making sure I can buy all the ingredients, with the exception of PastaRx,  in the grocery store. Sure enough, Whole Foods did not disappoint.

 

I was pleasantly surprised by how incredibly easy this recipe was. Dare I say, fool proof? Usually when I cook there’s at least one “oh shoot” moment when I forget to add something or add ingredients out of order. This really is a set it and forget it type of dish. And since I can make these before my son Lukas gets home from daycare, it’s important that I can refrigerate the finished dish, and heat it up after he is asleep.

Zone PastaRx Orzo Enchiladas

Our Orzo Enchiladas combine Tex-Mex flavors with our hearty Orzo PastaRx for an easy weeknight dinner on the table in less than 30 minutes. This recipe is sure to make it into your regular rotation. It's quick and easy, and we always have these ingredients on hand.

Recipe #2: Pasta Primavera

Chopping four different vegetables can eat up a lot of time, so I have one of those vegetable choppers that cuts the time in half. Similar to the Enchilada recipe, I like that I can throw in the PastaRx dry and don’t have to cook it separately. There’s a bit of stirring throughout, but it's not a huge hardship.

Zone PastaRx Fusilli Primavera

With a medley of fresh vegetables and herbs, this one-pot Zone Pasta Primavera has lots of green to go around. Onions, mushrooms, garlic and parsley add a little more oomph and flavor to our Fusilli PastaRx. Enjoy a touch of creamy goodness with a splash of milk and a sprinkle of grated Parmesan. It's a perfect dish for spring.

Recipe #3: Creamy Fusilli and Cheese

For me, “glorified mac & cheese” should’ve been a home run. Or maybe I was cocky from being 2 for 2 with my one-pot successes. But instead, it was a lesson in using the precise ingredients. On my first attempt, I substituted lactose-free milk instead of regular milk and the cheeses congealed. My second attempt was successful, plus it worked out later when I reheated it in the oven. Lesson learned: Cheese and lactose do mix. And when they do, it’s delicious.
